Hello fellow bloggers, here's the recipe I promised you guys! Enjoy.
Ingredients
1
pound of beef tenderloin
1
1/2 medium red onions cut in thick strips
2
medium sized tomatoes cut in thick strips
1
Tbl. garlic
1
Tbl. Ground Panca Peppers
Salt
and Pepper
1
little packet of "Sazon Goya" Cilantro and Tomato seasoning
5
Tbl Soy Sauce (or at your own tasting)
3
Tbl. fresh chopped parsley
Handful
of pre-cooked French fries
White
rice for side (optional)
Directions:
1. Begin by heating up skillet
(preferably large wok to be able to add the rest of the ingredients together)
at a medium high heat with a drizzle of oil and start to sauté your beef. Make
sure you cut them into thin slices (stir fry style).
2. After the meat is done, remove from
pan with all the juices and set aside. Drizzle a little bit of oil and start to
sauté the garlic with the Sazon Goya seasoning and the ground panca peppers.
3. Once the seasonings are mixed well
add the onions and tomatoes. It helped me to do half of the onions and half of
the tomatoes first so that everything fits.
4. Add the rest of the tomatoes and onions and
let them sweat. Cover the pan for about 3-6 minutes. Keep an eye out on it and
mix well.
5. Add the beef tenderloin back into
the pan with all ingredients mixed well. At this point you can add the chopped
parsley and soy sauce for flavoring.
6. Finally, add the French fries at the
end and serve with some rice and voila!
